Sweet & Salty Oats & Cookies


Have you ever made homemade granola?  I hadn't until I made these cookies.  It's super easy and I think it tastes better than store bought granola.  Not to mention it is sweet and salty flavored, and I don't think I've ever seen that type in stores.  It made a lot of granola, so I used it in other things in addition to these awesome cookies.  


These cookies are giant.  I actually may make them a little smaller next time I make them, cause they are a little hard to eat more than one, without feeling excessively full.  And no one wants to just eat one cookie.  And I don't think you would ever know it by taste, but these cookies are vegan!


Salty & Sweet Oats & Cookies

For the granola:
2 cups rolled oats
1 1/2 cups crushed pretzels
1/4 cup sugar
2 Tbsp honey
2 tsp cinnamon
2 Tbsp oil  (I used coconut oil, melted)
2 Tbsp water

Preheat oven to 375 degrees.  Combine all ingredients in a large bowl and stir until it all somewhat sticks together.  Spread out granola evenly on a baking sheet.  Bake for 16 minutes, shaking half way through baking.  Set aside and let cool.

For the cookies:
3 cups salty and sweet granola
1 cup whole wheat flour
1/3 light brown sugar
1/8 cup honey
1/2 cup earth balance butter
1/2 tsp baking powder
1/4 cup + 2 Tbsp mini chocolate chips
dash of salt
non-dairy milk as needed

Preheat oven to 350.  Grease or line a baking sheet with parchment paper.  With a mixer, mix together the sugars and butter.  In a separate bowl, combine the oats, flour, baking powder, chocolate chips and salt.  Add the dry ingredients to the wet ingredient and stir until combined.  Add in a few Tbsp of milk as needed to have a consistency of dough that sticks together when squeezed.  Drop by large tablespoonfuls onto baking sheet and flatten slightly.  Bake for 16 minutes, until edges are lightly browned.  Let cool on baking sheet to firm up.
