Bacon Brownies.

Bacon Brownies.

yes, that's right. I did not mistake one word for another.  I said Bacon brownies.

My thought when I first heard of the bacon-chocolate combination?  Repulsive! Disgusting! Yuck!

Hubster, on the other hand, is completely sold.  Now that there candy bar costs about $7.00.  yikes!  That's just ridiculous.  So every now and then I will get one for him, only on special occasions.  cause really, that's crazy.  $7 bucks for a candy bar?

Even though I know Jeremy's arteries are hardening as we speak, and probably hating me for introducing him to this match-made-in-heaven sweet treat, I searched for something that was just as satisfying and costs much less than $7 for one serving.

This is where the Bacon brownies came from.

I'm not really a chocolate fan.  People think I'm crazy.  Nor am I a huge bacon fan.  I just don't find either of them all that appetizing.  I hardly ever eat chocolate, unless someone has made something, and I'm trying to be polite.  I do like to bake with it occasionally, although I rarely eat the finished dish.

Melting 100% cacao+butter in my makeshift double boiler- a glass bowl on top of a saucepan of boiling water.  Works wonderfully!

Adding the bacon pieces to the brownie batter...

The baked brownies...filled with bacon.

Now, I have a confession.  As I said earlier...I don't have a particular liking for either bacon or chocolate.

Well,

I like these brownies.  I like them quite a bit.

Sssssh!

Bacon Brownies
Adapted from 17andbaking

4 oz unsweet chocolate, finely chopped
8 T butter
1 1/2 cup sugar
1/4 tsp salt
2 tsp vanilla extract
2 large eggs
1 cup flour
2 T cocoa
4-5 strips of crispy cooked bacon, chopped into pieces about the size of your fingernail

preheat oven to 350 degrees.  line a 9x9 dish with parchment paper, and grease the parchment.

Put chopped chocolate and butter into a double boiler (or glass bowl on top of a pan of boiling water).  stir the chocolate and butter mixture until it is melted completely and smooth.  Remove from heat and let cool a little bit.

Whisk in the sugar, salt and vanilla.  Then add in eggs, one at a time, stirring until smooth.  Stir in flour and cocoa.  and then the bacon.

scrape batter into dish with parchment paper and smooth out the top.  Bake 30-40 mins until a toothpick inserted into the center of the brownies comes out clean.  Let the brownies cool and then lift them out of the dish with the parchment paper, using it as a sling.  Let them cool completely before cutting into bars.
