Smore's Pie


My last post was about the last thing that I baked in our old apartment.  So to follow, this post is about the first thing that I baked in our new house.


I made a Smore's pie.  Jeremy has mentioned before that I should make one, and I have forgotten about it until now.  I think it turned out pretty darn well.


I made a graham cracker crust, filled it with a gooey chocolate center, and topped it with a bunch of mini marshmallows which I then browned.  I LOVE my new stove/oven!  We have a gas stove, and an amazing oven, that cooks things perfectly.


It was delicious, and extremely rich.  Rich as in, you eat one piece and immediately pass out on the couch from a full and happy belly.  This is what happened to Jeremy after he ate it.  Haha!

Smore's Pie

1 1/2 cup graham cracker crumbs
5 Tbsp butter, melted
3/4 cup heavy cream
1/4 cup milk
10 oz semi-sweet chocolate, chopped (this works better if you use actually chocolate, not chocolate chips)
1 Tbsp sugar
1/8 tsp salt
1 egg, room temperature, beaten.
2 cups-ish of mini marshmallows

Mix in the melted butter with the graham crackers.  Press into the bottom of a tart/pie pan.  Put this in the fridge.  Preheat the oven to 325.  Heat the cream and milk in a pot on med-low.  Heat until just simmering.  Remove from heat and immediately add the chocolate, stirring until it is mixed in and smooth.  Add the sugar and salt and mix well.  Add in the beaten egg and mix until completely blended.  Pour the chocolate mixture into the graham cracker crust.  Bake for 15-20 mins, until center is set.  Edges  of the filling should not be bubbly/crackly.  At that point, it is about to be overbaked.  Once baked, sprinkle top of pie with a bunch of mini marshmallows until covered.  Put the oven on broil, and put the pie back in there.  Don't leave!  Turn the oven light on and sit there and watch the marshmallows under the broiler.  They will puff up a little bit, and then start to brown.  If you leave, they will burn and it will smell awful and make a big mess.  It only takes a few minutes for them to get good and brown.

    I have a question that I thought maybe you could help me with....I LOVE sugar cookies, and have been trying desperately to make my own for quite some time now. Problem is, I am NO baker. Every time I attempt them, they come out too dry and they end up looking and tasting way more like biscuits than they should. I've tried tons of different recipies, but it doesn't seem to matter. I think I'm cursed :)

    Help?
